im sure my cousin used to do push bike time trials on the open roads with bamboo as his tyres

Bellboy, the wheels rather than the tyres may well have been of bamboo.

Was reading some of the "tour" history the other day, originally they used wooden tyres, was some time before the organisers accepted that the glue used on rubber tyres could withstand the heat generated on some of the descents.

Bamboo fibre can be used to make practically anything. There is clothing made from "Bamboose" which is a viscose substitute.
It is also used for making substitute rubber mats for floor covering.
That's just the result of half a minute Googling.
