Is it possible to just copy the soundtrack from a DVD onto a CD?

Yep. Back in the day I used to rip the audio-description track to make cheap audiobooks with good sound effects.

Various options available, Google for the best one.

Yeah, that would be my Plan A, Plan B would be to play the DVD back in real time and use something like Totalrecorder to record the sound it; you can probably do it with Audacity with a bit of fiddling.
